For decades our family treated burdock as a weed on the farm, hacking at it and burning it and before knowing what was wrong with doing so - poisoning it. But it never gave up and always came back along the edges of the fields and groves. Then, a chance meeting had us research just what burdock is - and it turns out it is a medicinal herb used in the far east and Europe extensively and the health food movement here in the U.S. is picking up on it. And it was going for $16/lb powdered. So, it became something different to us on our now organic farm. No less, harvesting the long, strong root deep in the compacted black soil of the upper American prairie is a trial. While we work on better ways to harvest it, for now it is simply work.
