Chilie Peppers - Taos
Dried ristras hang from the vigas on our portals. Whether your preference is verde or roja, the pepper is the same—the red version is simply the ripened version, much like a bell pepper changes color in various stages. Hatch chile peppers are a generic name for New Mexican peppers that are grown and harvested in the Hatch Valley region, Taos, New Mexico.
