Josephine Xuereb is a fifth generation salt farmer who is at the helm of her family's salt trade. In this image she is sweeping salt that will be drained, transported and packaged for sale. The family does not hire help to work in the salinas, which means the salt goes directly from their hands to the consumer. This artisanal, slow harvested salt exhibits the terroir of the Gozitan West Coast.
