Mezcaleros Unloading Maguey
In San Balthazar Guelavia, Oaxaca, Mexico: two mezcaleros, one in the flesh and one a shadow, are unloading espadin, the most propagated agaves used for mezcal production, owing to its immense size, high sugar content, and relatively short time to maturation, anywhere between seven and sixteen years, they told me.
