We were seated right next to the kitchen of a very old and crowded dimsum restaurant in Hong Kong. I was trying to capture the momentarily empty kitchen because I was intrigued by the steam and lighting framed by the old dark wood. As I started to press the shutter, the head chef suddenly sprang into the picture and looked straight at me.
